Over 2 Million Views—and Still One of My Most-Requested Recipes

I had no idea when I shared these Boursin Potato Gratin that more than 2 million people would end up watching them.

But I completely understand why they did.

They’re creamy, cheesy, perfectly seasoned, golden on top—and surprisingly simple to make. It’s one of those recipes that looks and tastes like you spent far more time in the kitchen than you actually did. And those are always my favorite recipes to share.

Since that original post, these potatoes have become one of my most-requested recipes. So I decided they deserved a permanent home here on the blog.

The secret is Boursin cheese. It melts into heavy cream with shallots and garlic to create the easiest rich, creamy sauce. Then I add Finch + Fennel Italian Seasoning, which gives the potatoes so much flavor without needing a long list of ingredients.

Layer the potatoes, season generously, pour that creamy Boursin mixture over the top, and into the oven they go.

About an hour later, you have tender potatoes bubbling in that incredible cream sauce with a beautiful golden top.

And apparently, a potato recipe worth more than 2 million views.

But what I love most about this dish is that it’s exactly the kind of recipe I believe in—simple enough to actually make, special enough to serve to people you love, and meant to be passed around a table.

Boursin Potato Gratin

Serves 8–10

Ingredients

  • 2 cups heavy cream
  • 1 (5-ounce) package Boursin Cracked Black Pepper Cheese
  • 2 tablespoons minced shallots
  • 1 clove garlic, minced
  • 2½ pounds potatoes, scrubbed and sliced ¼-inch thick
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons Finch + Fennel Italian Seasoning

Instructions

Preheat oven to 400°F.

In a heavy 1½-quart saucepan, combine the heavy cream, Boursin cheese, shallots, and garlic. Heat over medium heat, stirring until the Boursin has completely melted and the mixture is smooth.

Arrange the sliced potatoes in a baking dish.

Generously season the potatoes with Finch + Fennel Italian Seasoning, salt, and freshly ground black pepper.

Pour the warm Boursin cream mixture evenly over the potatoes.

Bake for approximately 1 hour, or until the potatoes are tender and the top is golden brown and bubbling.

Let the gratin rest for a few minutes before serving.
