When it looks impressive but couldn’t be easier, that’s my kind of recipe.

I love an appetizer that looks beautiful on the table but doesn’t require spending hours in the kitchen. This Boursin and roasted tomato dip is exactly that.

It starts with cherry tomatoes roasted until they’re soft, juicy, and bursting with flavor. While they’re in the oven, I spread creamy Boursin into a serving dish and layer it with fresh heirloom tomatoes and basil. Then comes the best part—the warm roasted tomatoes and all those delicious juices get spooned right over the top.

It’s colorful, a little unexpected, and so easy to put together.

And really, isn’t that the secret to entertaining more often? Find a few things you love to serve, make them simple, and invite people over.

An Easy Appetizer That Looks Beautiful on the Table

I'm always drawn to recipes that do double duty. They need to taste delicious, of course, but I also love when the finished dish is pretty enough to become part of the table.

This one checks both boxes.

The different colors of the heirloom tomatoes, the fresh basil, and those gorgeous roasted cherry tomatoes make it feel special without being fussy.

Serve it with toasted baguette slices, set it in the middle of the table, and let everyone dig in.

The Secret Is Roasting the Tomatoes

Roasting the cherry tomatoes is what makes this appetizer so good.

I toss them with garlic, olive oil, Finch & Fennel Italian seasoning, salt, and pepper and let them roast until they're soft and juicy. As they cook, the tomatoes release their juices and everything comes together into this wonderful warm mixture that becomes almost a sauce.

And don't leave those juices behind! You want every bit of that goodness spooned over the Boursin and heirloom tomatoes.

Boursin & Roasted Cherry Tomato Heirloom Dip

Ingredients

  • 1 container cherry tomatoes
  • 3–4 garlic cloves, minced
  • Olive oil
  • 1–2 teaspoons Finch & Fennel Italian seasoning
  • Salt and freshly ground black pepper
  • 1 package Boursin Garlic & Fine Herbs cheese
  • 2–3 heirloom tomatoes, sliced
  • Fresh basil

Instructions

Preheat your oven to 400°F.

Place the cherry tomatoes in a baking dish and add the minced garlic. Drizzle generously with olive oil, then season with Italian seasoning, salt, and pepper.

Roast for approximately 45 minutes, or until the tomatoes are soft, blistered, and have released their juices.

While the tomatoes are roasting, spread the Boursin evenly across the bottom of a shallow serving dish.

Arrange the sliced heirloom tomatoes over the Boursin and add fresh basil.

When the cherry tomatoes are finished roasting, spoon the warm tomatoes—and all of those wonderful juices—over the heirloom tomatoes and Boursin.

Finish with a little additional fresh basil and serve immediately.

Make It Your Own

One of the reasons I love recipes like this is that you really don't have to overthink them.

Use whatever heirloom tomatoes look beautiful at the market. Add a little more garlic if you're a garlic lover. Adjust the seasoning to taste.

And don't worry about making the finished dish look perfect. Those juicy roasted tomatoes spooned over the fresh tomatoes are supposed to look a little effortless.

That's part of the charm.

What to Serve With Boursin & Roasted Tomato Dip

My first choice is a sliced, toasted baguette. You want something sturdy enough to scoop up the Boursin, tomatoes, and those delicious juices all in one bite.

Put it out with a bottle of wine, a pretty stack of cocktail napkins, and a few friends around the table.

That's my kind of entertaining.

Beautiful doesn't have to be complicated.
